You could also put in most songs from The Kinks.

Alot of their songs are just one riff that's goes on throughout the entire song. Simple, but very very catchy. (I had their one song stuck in my head all day yesterday.)

Well, for riffs...

Crazy Train by Ozzy Osbourne - Probably one of the most well known riffs ever, and for good reason. It's simple, it's catchy, and it's fun to play.
Scar Tissue by Red Hot Chili Peppers - Memorable and has a great sound to it.
Walk by Pantera - Interesting and has a nice swing and groove to it.
The Trooper by Iron Maiden - Another one that's catchy and fun to play.
Downfall by Children of Bodom - The riff in the beginning is probably my favorite riff, just love the way it sounds.
Voodoo Child by Jimi Hendrix - Already been said but this is definitely one of the greatest riffs made.

Now for solos...

Kick the Chair by Megadeth - Very likely to be my favorite solo ever. I just love the speed melody that kicks in, then switches to a different tone and still rocks it out.
Don't Cry by Guns N' Roses - Probably my favorite solo from Guns N' Roses, really captures the most emotion I think.
Burden by Opeth - Really an interesting solo the way it carries on.
Mr. Crowley by Ozzy Osbourne - I don't think I need to explain this one.

the bass work in YYZ by Rush is some of the best I've ever heard. i think bass guitar should be included on this.

This isn't any particular song, but a person. He used to be on YouTube, but got suspended for copyright or something. But the way he plays is so amazing. He plays the bass, chords, and melody all on one guitar. It sounds so awesome and I could listen to it all day. Even though its just one guitar, it sound like a whole lot more and its easy to recognize the songs. There are a lot of videos on YouTube of him, but none are from his account. I'm gonna stop ranting on and on about him.

The one that comes immediately to mind is the outro to "Turn It Again" by the Red Hot Chili Peppers. Maybe unfamiliar to most since it was never a single.
